The yellow solid is soluble in water and is mainly used as an antioxidant and preservative on an industrial scale.

This chemical is produced on an industrial scale by passing sulfur dioxide through caustic soda and sodium sulfite crystals are formed at the end of the process.

The processing of this product causes sodium sulfite to be produced in two edible and industrial grades.
